8 Amazing healthy lunch ideas for work
What are you packing for lunch, or are you one of the many people who got out at lunchtime to their favorite sandwich bar or fast food restaurant for a quick bite to eat? If you are, then you are probably paying over the odds for your food and you will be eating lots of fattening, unhealthy food that you just don’t need. Packing your own lunch is healthier, more cost effective, you control the portion sizes and you know exactly what the ingredients are. Here are eight great recipes for some delicious and healthy lunches that you can take to work:
1. Cumin egg salad with gherkins and green onions
Spice up your egg salad with a touch of exotic cumin. Peel and chop two hard boiled eggs and mix with ½ teaspoon of cumin, add some chopped gherkins and green onions and a dash of fresh lemon juice. Spread on top of a fresh green leaf salad and add a sprinkling of salt and pepper, and you have a fresh egg salad with a difference.
2. White bean, eggs and avocado sandwich
For a healthy version of the famous club sandwich, try mashing 8 ounces of cooked white beans with a tablespoon of olive oil and add a dash of salt and pepper to season. Spread on some toasted whole grain breads and then add sliced avocado, sliced hard boiled egg and a slice of low fat cheese, such as mozzarella. Top with another slice of toasted bread for a filling and nutritious healthy lunch.
3. Sun-dried tomato pasta with olives and avocado
Chop 8 sun-dried tomatoes and mix with 2 tablespoons of chopped and pitted olives, 150 grams of cooked pasta, along with some chopped fresh basil. Mix together 2-3 tablespoons of sesame oil, some minced garlic and a teaspoon of balsamic vinegar and stir this in with the pasta. Then just sprinkle with a little freshly grated cheese of your choice and add some avocado slices on top; and, voila, a taste of the Mediterranean at work!
4. Turkey tortilla roll with fresh veggies and mozzarella cheese
Take a whole-wheat tortilla, add some sliced, lean turkey strips and layer on some sliced red pepper, shredded carrots, fresh onion slices, mozzarella cheese and a lettuce leaf, then roll up and slice. Balance your lunch with a fresh fruit salad to follow.
5. Tropical taco salad with pineapple and avocado
For a great, toss and go salad, take ¼ head of shredded lettuce, ¼ pineapple, peeled and chopped, half avocado, peeled and sliced, and add some chopped fresh onion, shredded carrots and a small chopped tomato. Mix it all together with two chopped hard boiled eggs, some grapesseed oil and tablespoon of lemon juice and sprinkle crushed tacos over the tip for a bit of crunch with your tropical salad.
6. Cream cheese and colorful vegetables bagel
Bright colors and fantastic flavours, this bagel will give the energy you need to get through the day. Slice a bagel and spread on some low-fat cream cheese. Then pile it high with some thinly sliced cucumber, some chopped gherkins, a layer of sliced yellow and red pepper and top with some grated raw carrot.
7. Chicken, mango and Brie sandwich
The prefect combination of creamy Brie cheese, delicious sliced mango and protein chicken will give you a sweet and savoury treat all in one great sandwich. First, mix a teaspoon of Dijon mustard with half a teaspoon of honey and spread onto some sliced whole grain bread. Layer in some sliced chicken, sliced Brie and slices of ¼ fresh mango, make up into a sandwich with another slice of bread and enjoy the wonderful mix of flavors.
8. Tuna, lettuce, apple and pineapple pita salad
Mix 10 ounces of tuna chunks with ¼ cup of chopped pineapple, ¼ cup of chopped apple, ¼ cup of low fat creamy Italian dressing, and some finely chopped sweet red pepper and fresh onions. Spread the mix onto halved pita bread rounds and top off with a lettuce leaf or two. Enjoy!
